Cheesy Oat… Cookies?

There is an amazing Hungarian blog my friend introduced me to about two months ago and I am just obsessed with all the recipes there. They are all fit and clean, use really simple ingredients that I usually have at home anyway and last but not least, they are delicious. So since most of you probably don’t understand Hungarian, I would like to feature on of their recipes that I have just tried – and just can’t stop talking about it.

I have been craving some salty but healthy snacks for days but had no idea what to make or bake so I was incredibly happy when I bumped into this recipe today. So simple. But so good. Let’s see. You only need a few ingredients:

  • 250 g low fat cottage cheese
  • 2 eggs
  • 3 tablespoons oat flour
  • 3 tablespoons steel cut oats
  • 1/2 teaspoon salt
  • ~100 g shredded cheese

So first get a bowl and mix the oat flour, oats and the salt.

Then add the cottage cheese and the eggs.

IMG_20150202_163052Line a baking dish with baking paper then spoon the dough on it in little batches.

IMG_20150202_163716When ready, put the shredded cheese on top and bake it in the pre-heated oven for 20 mins. (180°C) until the top is golden brown.

I hate to repeat myself but it was so simple and so delicious! It was so good that my dad -who refuses to even taste 90% of my healthy creations- liked it so much that he ate most of them before I realized haha.
