On a rainy day like today, one of my favourite breakfasts is french toast. It’s easy to make, you can make it relatively healthy and just feels so comforting.
- Two slices of whole grain toast bread
- 1 egg
- a splash of milk
- 1/2 teaspoon vanilla extract
Just soak the bread in the egg mixture, then fry it on a little bit of coconut oil. When it’s ready top it with your favourite toppings! I usually use peanut butter and banana slices, but since I’m still really excited about the strawberry season I topped my french toast with shredded coconut and fresh strawberries – and it was just perfect! You can use any fruits you like to add a little freshness to this meal.
