Salad today

As summer is approaching and the weather is getting hotter, I like to get lighter meals that keep me full without being too heavy on my stomach. So I’ve been eating salads instead of rice more frequently lately – and I love it! I have this two-level box with a little container for the dressing that makes taking salads with me for lunch on the go so much easier!

Today I had tomatoes, cucumber, bell peppers, feta cheese and a dressing made of plain yoghurt and some spices. And then I added chicken to get that extra protein of course! It was simply delicious!

How are you with salads? Do you also eat it more in the summer?

  1. I love salads a little too much. I throw all sorts of things in: fruit, spinach, peppers, mushrooms, squash, broccoli, quinoa,… (The list continues) 🙂
