Microwave mug cake!

I have seen so many recipes on Pinterest for making these quick and easy mug cakes in the microwave, but I was never brave enough to try. But the other day one of my friends told me she just tried one, even though she was also afraid that it’d turn out horrible. But as she said, it turned out surprisingly well, so I decided to give it a try!

Actually the recipes are right: these mug cakes are super easy and super fast and are surprisingly good! And the best thing is: using the right ingredients it is a perfect healthy snack or breakfast! The variations possible are endless, however I tried a simple one for the first time.

  1. In a mug or bowl, mix together: 4 tablespoons of healthy flour (I used whole grain rye flour) and 3/4 teaspoon baking powder. Add 1 tablespoon of shredded coconut!

    mugcake-0842472. Add about 1 tablespoon of coconut oil and 3-4 tablespoons of milk of your choice.

3. Add an egg!

IMG_20150522_084733         5. Add dark chocolate chips (or berries or whatever you want as an extra add-in actually) and stir again

6. Pop it into the microwave on high for 3 minutes – and your healthy cake is ready! It was easy, huh?

I was afraid it wouldn’t cook properly in the microwave but the consistency was perfect, like a really cake! I probably should have flipped it out of the bowl and make it a bit prettier, haha, but maybe next time. This is perfect for those gloomy rainy mornings like today, to cuddle up under the blanket! I would recommend melting a little peanut butter on top to make it even better!

  1. Yum!! I love making mug pancakes and this looks very similar 🙂 I add in mashed banana and it gives it a really moist texture and great flavor!
